SMMC Hosting Nutrition Fair – MyPlate for a Healthy Weight

Enjoy free samples, watch food demonstrations, get tips for growing your own vegetables and more!

In celebration of National Nutrition Month, Southern Maine Medical Center (SMMC) is hosting a nutrition fair – MyPlate for a Healthy Weight – in the SMHC Café on Thursday, March 7 from 11 a.m. to 1:30 p.m.

“Part of SMHC’s mission as a member of MaineHealth is to ensure that our communities are the healthiest in America,” said Director of Nutrition Services Mike Sabo. “Eating nutritious food and maintaining a healthy weight are two of the most important things we can do to take care of ourselves. The MyPlate for a Healthy Weight Nutrition Fair is designed to give people ideas and tips on how to make healthy food choices. We’re inviting the public to stop by and help us celebrate National Nutrition Month.”

During the event fairgoers can:

  • Sample healthy snacks
  • Watch food preparation demonstrations
  • Meet master gardeners and get tips for growing their own vegetables
  • Learn tips and tricks on portion control
  • Participate in raffles and win exciting prizes!

In addition to their usual array of freshly prepared lunch selections, the SMHC Café will be serving the following special entrees: Pan Seared Salmon with Pecan Parsley Pesto and Roast Turkey Dinner with Pan Gravy, Mashed Potatoes and Savory Butternut Squash.

 

Grilled Salmon Fillet w/ Greek Salsa a la SMHC Cafe
Yield – 2 Portions

This grilled salmon dish makes a nice light lunch or dinner. Combine it with steamed brown rice for a more substantial offering.

The Greek salsa is also delicious served over grilled chicken or spread it on a sliced baguette to make a scrumptious bruschetta.

Ingredients:
Two 4 ounce boneless, skinless salmon fillets
½ teaspoon lemon pepper seasoning
1 teaspoon olive oil
8 ounces fresh baby spinach

Greek Salsa:
¼ cup Feta cheese, ¼ inch dice or crumbled
2 tablespoon chopped Scallions
1 ounce Calamata olives, cut in quarters (about 2 tablespoons)
1 cup ripe plum tomatoes, ¼ inch dice
½ teaspoon fresh chopped garlic
¼ cup diced green peppers
¼ teaspoon black pepper
½ teaspoon dried oregano leaves
¼ cup chopped walnuts
2 teaspoon lemon juice

Combine all salsa ingredients and toss to mix evenly. Salsa should be made one to two hours before serving to allow flavors to blend.

Sprinkle olive oil and seasoning over both sides of salmon fillets. Grill fillets on both sides until lightly cooked. Do not overcook or fish will be dry.

Place approximately 1 cup of spinach in large entrée bowl or plate. Top with hot salmon fillet. Top with approximately ½ cup salsa and serve immediately.
